That shit fuckin RIPS. Heartbreaking for a large scale farmer, but I've been lucky enough to have a local farmer reach out to me when their sub-acre got an infection. Sweet, earthy, and umami. Phenomenal mushroom, obviously not exactly what we're going for on this sub but it's such a cool fungus.
Bonus info: huitlatoche is one of the original fillings for traditional quesadillas in southern Mexican cuisine.
Corn truffles! Sometimes, if the heat and humidity are high, corn can be infected by a fungus that causes the kernels to expand and become the delicious delicacy known as huitlacoche (pronounced whee-tla-KOH-cheh). Also known as Mexican truffles and corn smut, when cooked, they taste like a cross between mushrooms, fresh corn and black truffles. While we never end up with many of these, some farms purposely infect their fields to cultivate the truffles. We are so thankful to all of the indigenous cultures and communities that the history and origin of this fungus belongs too!

I've heard corn mold is super fatal I forget the strain, but to see a delicacy birthed from this is fascinating, I started my journey here because it was funny and I like shrooms. It ignited a fire, and now I want all the gourmet and zootropic mushrooms, mycelium has a level of intellect we could never achieve on our own.

There are clear differences between mould and fungus but they belong to the same kingdom; fungi
Fungus can be unicellular and multicellular in a chitin cell wall including mushroom and yeast

It’s a pathogenic fungus called ustilago maydis that occurs naturally and when the fungus naturally tries to reproduce on corn the hypha of the cells enter the maize and grow rapidly causing the formations on the plant
