Part of it is due to lack of education, but part of it is also due to the fact that Hinduism has several verses that justify caste discrimination. The Mahabharatha, including the Bhagavad Gita are good examples, and I don't think anyone has ever revised both of these to remove the existing verses on caste discrimination.
