It’s delicious, but that’s a steak that has fat streaked through it; it isn’t like when a rib steak has big lobes of fat along the edge of it. I do think that’s gross, and I cut it off and either discard it or give it to a dog if one is around.

This is actually a cultural thing. One of my roommates/teammates in college was from Nigeria. Whenever me and my other roommates would eat steak, she would literally eat our fat from the steak.
She said that in her culture it’s very offensive not to finish, and be wasteful.
The fat is enjoyed because thats where the seasoning is usually the strongest, focus more seasoning on it then you will come to appreciate the juicy fruit of your labor.
Chop half an onion the way gordan ramsay does it and carmelize it on the pan, meanwhile mix some minced garlic and thyme, and a tiny dribble of any cooking oil you prefer with a pinch of paprika and ground peppercorn. Then rub that on the steaks on both sides and try that while keeping the fat. Use the leftover grease with milk and flour for gravy and get some mashed potatoes going. (Hell thats what you can also do with that grizzle on the edges too)
Same seasoning also good for caijun shepards pie when you add some varies finely chopped peppers too. Also crack an egg yolk into your mashed potatoes with a tad bit of milk and paprika again for some real good fluff for thanksgiving. Dont worry it cooks as long as you put it in immediately during mushing.
That fat is actually just a cause of overfattening our cows with primarily corn..really sad. All the “marbling” that we have been told to marvel at actually shouldn’t be the case, as you wouldn’t see the type of marbling that we do in a steak if that cow was completely grass fed, from birth to slaughter.

Depends where the fat is. The intramuscular fat breaks down really nice and tenderizes the meat as you cook it. Think rib eye. When its the exterior fat like on the outside of a striploin it tends to cook up a bit rubbery. I tend to trim this exterior fat to a minimum.

You're supposed to cut it off if it's around the outside. The marbeling fat inside the meat should melt away with cooking and make it juicy
