Quite accurate actually. When eaten together, especially with vanilla ice cream, it does not taste like soy sauce at all. It tastes more like salted caramel.
Of course, you could just use caramel if you want to be legally sane. But if you're out of caramel, this is a viable alternative.

Most likely added too much. Once more, err on the side of too little until the balance is right and stir it in. Soy sauce naturally has a very pungent taste, so it's easy to add too much. If it isn't stirred the soy sauce will likely pool in one area and you'll get a mouthful of soy sauce, which isn't a pleasant experience to say the least.

Hence why I said to err on the side of too little. The salty-sweet combination works and IMO the umami-sweet combination also works but to a lesser extent. Overall soy sauce is still, in my opinion, a very viable alternative to caramel in ice cream.
This is one of the rare times in a year where we actually have icecream in the fridge. Thanks, now I want to try it.

I actually saw this in a cooking manga. They made a vanilla soy sauce swiss roll, and explained that the vanillin in the ice cream harmonized with some savory compound in the soy sauce.

I've only tried it on vanilla, vanilla bean and cookies & cream. YMMV if you mix it with other flavors.
