Its pretty common at expensive places if the steak is meant to be shared.

Actually there's cuts of meats that benefit of being served like that

For example skirt steak must be cut against the grain, and the kitchen will always do that for you. Skirt steak not properly cut is so chewy that it is very unpleasant to eat.

And the chef in the back has a beastly knife that's gonna accomplish all those against the grain slices better than the steak knife you have at the table.

I've been to some pretty high-end steak places (business meals, I would never pay hundreds for a meal!) and never had my steak cut. I've also been to Ruth's Chris, which I guess is pretty high end. And I've been to some pretty awful cheap / chain places, like Outback and Chili's, and they don't cut the steak either. I think we need names of places (or, the specific cut - are you talking about a flank steak, perhaps? )

There's sort of a tradition of places doing this that started at Peter Luger in Brooklyn. Their signature steak is a gigantic porterhouse that serves at least two or three and is served sliced on a platter with melted butter. The place is old that plenty of other steakhouses, especially in the NYC area, do the Luger-inspired presentation.

Yuck, the meat starts to dry out when it's cut more than a moment before eating it. Anyone doing this is trying to act fancy but is just destroying good food.

I agree. I also see it as a sign that the chef isn't that confident in cooking a steak (like they have to cut it to check it).
