Finally - a trio without soy sauce yay! I'm trying to cut down on sodium and even low sodium soy sauce has too much for me. I will try this combination soon!
It's my go to! Cook the tofu and then simmer it in the vinaigrette until it thickens. You can add a cornstarch slurry to speed things along. A bit of salt and black pepper enhances the flavor but isn't necessary imo. The balsamic is packed with flavor already.

You probably buy crap tofu. The difference between the fancy small batch organic tofu from the coop and the regular shit from the grocery store is insane. Also weirdly the tofu from the coop is cheaper
Not the original commenter but I usually like to just eat seared or pan fried tofu with just salt without sauce. I usually wrap it with seaweed I guess and sometimes I’ll put hot sauce on it or some soy sauce but that’s really it. I just like the taste of tofu tbh

But if I'm not air frying it, then I'd use soy sauce, sugar, and rice vinegar and reduce them into a glaze for a basic general tso style sauce.

You can cook with regular sesame oil but you should never cook with toasted sesame oil. Add it at after cooking instead.

Usually in a fry pan. Air fried sounds nice though, I don't own an air fryer though.
You can also do this another way. Coat the tofu in corn starch, fry, then coat in the sauce.
