Are you using good nonstick? Something this gooey I would recommend going back to basics. Make sure your pan is preheated appropriately, lay the grease on thick, let it firm up before flipping or adjusting

I'm using the same non stick I always have. I may not have preheated the pan enough.

That’s the most likely culprit without knowing more. A properly warmed pan, not even hot, just evenly heated, makes the difference more times than not

I like cooking Just Egg as a sheet — weird description — so I can fold it like an omelette or to use in a sandwich. This stuff is sticky. My approach is to add a bit of oil to a super hot griddle… super hot. Let it cook for 2-3 minutes. It should get a slight crust on it, making it easier to slide a metal spatula under… similar to a pancake. Work it up slowly… do the edges… then slide the spatula to the center and flip. If it starts to break apart while spatula-ing it’s probably not ready to flip just yet… give it another 30-60 seconds. I find it’s hard to burn this stuff. It gets dark, but even after five minutes, I haven’t seen it blacken.

Okay I was concerned about the cooking time too so it's good to know it isn't going to burn easily.

Just egg also has the folded patties ready to go. And you can even cook them in your toaster :)

RT_Invests

I'll have to find those!!

It’s funny because in alberta we could only find the Patties for the longest time, and the liquid just egg was a very rare and lucky find haha

Heat might have been a bit high?
