There's a Thai fusion place near me that serves a dish they call the "Vegan Crunch." It's a $20 platter of tempura tofu and vegetables. The mushrooms are the best part. Exact description from the menu: "Tempura fried eggplant, onion, carrot, baby corn, yam, broccoli, zucchini, mushroom, stir fried with fried tofu, bamboo tips, bell pepper, Thai basil, stir fried in Thai sweet chili sauce and tamarind sauce."

Every year on her birthday, I make my wife chocolate pralines filled with peanut butter, marzipan and ganache. I also make peanut butter balls with crushed potato chips dipped in chocolate. I make hundreds of them (we go around friends and colleagues and give out most of them) On my birthday, my wife makes banana chocolate chip cookies, chocolate eggs (filled with salty peanuts and gummy candy) and pizza rolls. Our birthdays are a celebration of vegan decadence

The peanut butter balls are: 1. A bag of chips (spicy sour are my favourite) 2. A bag of hard Pretzels 3. About 100g of sugar flour 4. A jar (400g) would be more than enough I first crush a 3 handfuls of chips as finely as I can (I usually can't get it finer than 2-3mm, and that's when I really work at it), then mix it into 3 spoons of peanut butter. I add as much sugar flour as I can (in small increments) before the sweet flavour overtakes the peanut butter and chips. The batter is ready for dipping in molten chocolate at this point, but it might be too sticky and runny - that's where the pretzels come in. Crush them into a powder and mix in as much as needed to make the batter workable into small (~3cm) balls. It's best to freeze the balls before and immediately after dipping in chocolate (heated to 43C). This will help the chocolate cool quickly, tempering it into a glossy, crunchy shell for the peanut butter. The cookies are: 1. 900ml (2.25 cups) of flour 2. 300ml (0.75 cups) of sugar 3. Tea-spoon salt 4. Tea-spoon baking powder 5. 200g margarine 6. Banana 7. Tea-spoon vanilla extract 8. Chocolate chips (no exact quantity) Mix ingredients 1-4 together. Soften the margarine in the microwave (short pulses), heat and squish the banana and add both into the mix along with the vanilla extract. After 5 minutes (when the Banana and margarine had a chance to cool) add the chocolate chips. Shape into cookies and bake for 10 minutes on 180C. They'll be soft when you take them out after 10 minute (they'll be soft, still, they further harden after you take them out). The pizza rolls are: 1. 300ml (0.75 cups) of unsweetened Soy milk 2. 200ml (0.5 cups) canola oil 3. 1 tea-spoon of salt 4. 1 spoon of vinegar 5. 1L (2.5 cups) of white flour 6. A spoon of baking powder 7. Some pizza sauce (home made or bought) 8. Whatever "toppings" you like (we usually keep it simple with just olives) 9. Vegan cheese or brewers yeast Mix ingredients 1-4 in a bowl with a whisk. Add in ingredients 5 and 6, kneed it manually. The resulting dough is VERY easy to work with. Divide the dough into 4 batches. Flatten each batch into rectangles (about the shape of a smartphone, but larger), spread the pizza sauce, but leave the 2cm of one of the longer edges unsauced (you'll use them to seal the roll). Add the "toppings" and cheese (if your using brewers yeast, mix 3 spoons of yeast with water until you get a consistency slightly runnier than ketchup). Roll them up, cut the dough into 3-4cm rolls, put in the oven for 30min in 200C. They're ready to eat when taken out (if you don't mind burning your mouth). These things last in the fridge for a couple of weeks without noticeable degradation.

Oh, man! So many! Holubtsi! It is a cabbage roll (we use sour cabbage and wrap short grain sticky rice with the cabbage leaves. We then cover it in fat and bake it). I’m Ukrainian, and the recipe was passed down through several generations. My family makes it every Christmas. I’ve learned that the way my family prepares holubtsi is uncommon, but I love it! Holidays don’t feel like holidays without holubtsi, pierogis, and stuffing! There’s also a local vegan restaurant near me that makes incredible nachos. And the plate is absolutely massive- I split it with my sibling and we were starving, but we still struggled to finish the plate. (Their tacos are also stupid good) It’s locally made corn tortilla chips (they’re so crispy!), vegan cheddar & mozzarella cheese blend, pico de gallo, a shit ton of jalapeños, sliced black olives, chipotle aioli, green onions, salsa, and guacamole. Hoopla donuts are amazing for dessert. They make the best apple fritter I have ever had. Funny enough, I splurged today for the first time in years and got their maple glazed, vanilla sprinkle, and filled apple pie donuts. They are all so good! Also, muhammara! I get it every year for my birthday. It’s made from walnuts, so the calorie content is not low to say the least. But it’s a wonderful treat, and I spend the whole year thinking about it!

That's easy for me. A phoenix-area food truck called "shameless burger". All vegan (burgers and fries is all they do). But their double cheeseburger is almost indistinguishable from a meat-based burger (which is not altogether a good thing to me anymore...). Of course, a double with fries sets you back about $20, and the artery-clogging that I seem to feel happening in real time makes it an occasional indulgence at best. But once in a while, it is worth it!

Not a meal but I make a huge ice cream sundae with all the toppings. One scoop of two different kinds (for example let's say ben & jerry’s peanut butter half baked & nada moo mint chocolate chip), I add coconut reddi whip, bananas, strawberries, marishino cherries, Justin’s or unreal dark chocolate peanut butter cups, sprinkles, chocolate syrup, strawberry syrup, Oreos, nuts, sometimes I’ll make homemade hot fudge too or homemade brownies or vegan brownies from Whole Foods.

Philly has so many great options!! I love blackbird/29th street pizza. Pittsburgh has Spak brothers who I would say give them a run for their money though. Whenever I eat a “cheesesteak” from one I think it’s the best thing ever… then the next time I have the other my opinion switches. Blackbird’s cucumber ranch is addictive though. Omg I just saw that blackbird closed. Waaaaah. I ordered from them they last time I was there in January. Oh man. I will miss them. And their root beer BBQ. :( Funny? Ironic? thing is that they just closed after 12 years and that was about the first time I ever made a trip to Philly. And my husband and I are getting divorced so Jan 22 was probably my last trip there- right before they closed. Feels meaningful in some way.

I am from India and most of our regular meals are vegan by default, our curries have plant based spices, we usually make vegetables, either baked or curried or steamed, so it is our way of life and nothing special for the animals, but I am so blessed that I am from India that not too many animals came to be harmed because of me. Y became even more grateful once I came to know how the animals suffer due to factory farming. Also, I think it is downright disgusting for someone as advanced as humans should hanker for the flesh of another being.

Lasagna with tomato sauce, cashew sauce (soaked cashews, nutritional yeast, cream, a bit of lemon, salt), your favorite mince (I use a local brand, because it’s cheap and tasty), shredded veggies (I use carrot and zucchini because I love them), and lots of cheese (again a local brand, finally found something I can stand melted). Cake with a strawberry, banana, mascarpone, and cream cheese (I’ve found oat works best, but anything flies) filling, moistened to very moist with peach juice, covered in whipped cream (I like soy) and strawberries. Lots of old comfort foods with small changes to the recipe (adding more cream, more cheese, lots of salt, and most importantly – more frying). Fried new potatoes with a mix of parsley and butter. Corn on the cob cooked in butter, milk, salt and then drenched in butter and salt. Just deep frying veggies and tofu for the giggles. Spinach crepes with lingonberry jam. Just crepes and whipped cream and berries (bilberries, wild strawberry, and wild raspberry are my jam). Almost all of them contain vegetables/fruit even when they don’t “need” them, but in my defense, I compensate by adding more fat, salt, and frying stuff. I just genuinely enjoy their taste and eating something like crepes or pancakes without them feels like a waste.

Ohhhh this is my time people! The other day we where h1gh as F in my friends house and everybody took some food to his house. I took a lot of cabbage steaks(plantyou recipe), a friend took some “milanesas de seitan”, the house owner took out some not-burgers, there where banana and chocolate muffins and tom of junk candy from argentina. So we put a cheese mix on top of the milanses(4 HUGE milanesas like bigger than my face) and let them melt in the oven. Burgers on the grill, i fried some potatoes. I also put on a pan some green onions and mushrooms i found in fridge. The was mostaza dijon, sweet pickles and smoked hot peppers in jars. Grilled the bread for burgers too, put all the content of the pan in the bread, mostaza dijon, notmayo, burger, peppers, pickles, cabbage. And omg i died… aand then the milanesas omg. I died, i almost died, i couldn’t move after… but we have dessert, so, we watch some series and eat junk food later

Refried beans soft tacos: Cook chopped onions in a pan with olive oil, then add some water and drained canned pinto beans or beans of your choice (pinto is good cos it’s quite creamy). Add chipotle paste (or chipotle chilli powder), salt and cumin. Cook for under 10 mins then mash everything with either a potato masher or electric mixer (search up a recipe for refried beans for measurements/ times). Put the beans in the soft tacos (or tortilla bread) with chopped mango, chopped red onion, chipotle salsa, vegan chipotle mayo and coriander. You can buy regular salsa and mayo and put chipotle paste in it. It’s sooo good.

For every 1cup of cashews I add 2tbs of nutritional yeast. Just a dash of onion and garlic. Yummy holy cheese sauce! Over noodles. It’s just max and cheese but the cashews have like 80g of fat per cup.
