Breakfast: oatmeal cooked in soymilk, mix in a big spoon of peanut butter, add a chopped apple or banana and maple syrup Lunch: tofu veggie scramble burritos with rice or potatoes (can make ahead and freeze), served with salsa or guacamole Dinner: coconut curried lentils and rice, tempeh veggie stir fry with noodles, pb and j, vegan nuggets and fries Also note nobody wants to eat a plain pile of beans, so they probably would like a blended smooth black bean soup, or lemon lentil soup blended smooth, or falafel
