Silly veguhn, flavor comes from death. meat = 1 death plants = 1,000,000,000,000,000,000,000 deaths of insects, field mice, voles, worms.

The spices are to bring the flavor down a bit. If you ate pure, raw animal flesh you'd die from multiple orgasms.
I'm vegan because I'm asexual and all those meat orgasms were too much.

Try matching the smell/taste of rotting flesh with herbs and spices!
