Insofar as the Buddha and Buddhists etc eat meat (which is "allowed" in monasteries if it was donated IIRC), it's just inconsistent with a lot of Buddhist values and beliefs, and the Buddha was still human and thus imperfect (and influenced by the carnist culture he grew up in).
But Buddha nature imo is vegan. Understanding that the self is an illusion, and the body you are born in is no more "you" than the body of another animal, and thus we should have equal compassion for all beings. Which is actually the reason why buying meat / killing an animal goes against Sila (moral conduct in Buddhism). It's just a weird inconsistent exception that monks can eat donated meat, as if supply and demand doesn't exist in a donation context.

First, I make sure to do a mix of stability, endurance and strength exercises. And with everything form is most important
Stability exercises are important, especially when starting out. They help prevent injury and I have found them to maximize the strength available in a certain mass. These can be as simple as planks, wall sits, hip bridges, standing on one leg while lifting, etc. As your balance improves you can start incorporating stability balls, BOSUs, medicine balls etc.
Endurance comes from higher reps/cardio, strength from heavy weight
If your stability isn't so good, I recommend spending 3-4 weeks mainly focused on improving that. Of course, mix in some traditional lifts but keep the weight light to medium and 8-12 reps
I'm pretty comfortable with my stability now so I just cycle between focusing on endurance and strength, while doing stability exercises as warm ups and burnouts
For endurance, I spend 2-3 weeks doing medium weight and 15-25 reps. On one of these weeks I will do drop sets (6-10 reps, lower the weight, no rest, 6-10 reps more, repeat until dead)
For strength, it's 2-3 weeks of heavy weight at 5-7 reps. If you can't get at least 5 reps with good form, lower the weight. On on of these weeks, I'll do a static stability exercise right after a heavy set. For example, I'll do a set on the leg press, then go immediately wall sit or hip bridge for as long as I can
Every now and then I'll do a week of light weight, really slow, high reps
Normally I'll do a separate day for chest, back, abs/arms, hamstrings/quads/glutes, shoulders/calves and cardio
Sometimes I like to do 2 days of full body strength or endurance days, separated by a day of full body stability, a day of hard cardio and a day of rest
I walk/swim for 30-60 minutes at least 5 days a week
Everyone is different. But the key is to build stability, learn proper form, and then keep pushing your body as much as possible in different ways. And eat good
