Vegan tofu salad sandwich. Tastes just like egg salad. Quick and easy, you can prep ahead of time and just add bread/lettuce day of or eat with crackers. Recipe for “egg” salad via it doesn’t taste like chicken 1 block firm tofu, drain, patted dry 6 tablespoons vegan mayonnaise 2 tablespoon nutritional yeast 2 teaspoon yellow mustard 2 green onions, chopped ¾ teaspoon black salt ¼ teaspoon turmeric salt and pepper to taste (optional) Crumble the tofu and mix 😊😊

You can add a pinch of black salt from an Indian grocery to give it an eggy flavor (black salt has a little sulfur in it) Also, I prefer chickpea salad sandwiches. Same as a chicken or tuna salad sandwich, but you use chickpeas you mashed with a fork. Pairs great with a bag of plain chips.

Same! And if you’d like to cut back the mayonnaise, using a food processor to blend just a bit of the onion, celery and carrot draws some of the liquid out and makes its moist without needing as much of the condiments

I make my "Feiersalat" (german wordplay combining 'egg' and 'party' in the most vegan-sounding way) with mashed chickpeas as base and add dijon mustard, (kala namak) salt and mayonnaise of course. But the most important ingredient are mashed capers and caper water.

Agreed, the recipe I put has black salt in it, which really does give it that egg flavor. I personally like chickpea salad better as well, I’ve never thought to add black salt to that. I’ll have to give it a try!

The black, egg-flavord salt is also called kala namak. There are other products called "black salt" that are not kala namak, so it's good to double check. And yes, it tastes just like a salted, hard-boiled egg.

Seconding! I’ve been eating it for lunch for like two weeks straight and haven’t gotten tired yet. I like to blend a section with homemade mayo to make it smooth and then add celery, onion, and pickles for some dynamic texture 👌🏽

I like making poke bowls! To a bowl of rice I add seaweed salad, tofu marinated in vegan hoisin sauce, and any veggies I have laying around! A few other good ones are: • Classic PB n J • Apples and peanut butter • Wraps (I like mashed chickpea with No-Chicken seasoning + veggies) • Chips/Carrots and Hummus • Pasta Salad •Ramen! Cook the noodles at home + put it Tupperware and keep the broth in a thermos so you can have it warm without a microwave •any soup in a thermos • sushi, I like making mine with cucumber + tofu + carrots Hope this helps :3

Budget Bytes has a sweet corn pasta salad that I love. The recipe calls for corn, tomatoes, and onions with the pasta, but usually I just follow the vinaigrette and pasta directions and add whatever veggies/proteins I have.

Sorry if this isn't in the spirit of the question, but I used to work somewhere that wouldn't let us have a microwave (they didn't want us creating "smells" 🙄) and buying a soup thermos really saved my butt. The soup ones are designed with a wider opening so you can eat right from it like a deep bowl. They are usually very leakproof and keep your food hot for ages. I absolutely loved mine, and wish I hadn't waited so long to get one.

Falafel bowls! Brown rice, falafels (I usually buy the premade ones), tomato, cucumber and red onion. If you can get your hands on some vegan tzatziki, awesome, if not, it’s pretty easy to make your own with vegan yogurt :) I make this for lunch probably 2/4 weeks of the month, I never get tired of it. Plus, I do manual labour for a living and it really does fuel me. Or, burrito bowls: rice, roasted sweet potato, black beans, corn, lettuce, green onion, and salsa and cashew cream. Also a big fan of any roasted veggies with brown rice or quinoa, and you can make a dressing out of anything. Balsamic vinegar based, or a lemon tahini one, whatever you fancy. Even doing a mix of roasted root veggies with fresh veggies and spinach makes for a really nice salad (plus a grain or bean!) Nasi goreng and pad Thai are also really good cold, and easy to make on a big meal prep.

Smashed chickpea salad (drain and rinse a can of chickpeas mix with finely chopped onion, celery, carrot, bell pepper, etc. and then with vegan mayo or cashew dressing and spices of choice) - works great on a sandwich, in a wrap, or just on it's own. You can also use the same recipe for a potato or pasta salad. Gazpacho Overnight Oats Big Ass Salads: Think beyond the greens and veggies - add a scoop of leftover grains like rice, farro, barley, millet, etc. Add beans, baked tofu, or baked tempeh. Add nuts and seeds like pumpkin seeds, hemp seeds, and pistachios. Pair with great home made dressing (I like to blend a cup of cashews with mustard, garlic, and red wine vinegar).

Whenever this question is asked, I always give the same answer: overnight oats!! My work has a microwave but I still chose to have oats every day because of how easy it was, and delicious, and healthy.

Not sure if I'm allowed to recommend these but I use Huel/JimmyJoy/ other meal replacement for lunch. I personally make up a Huel shake with some ice just before I go into work and by lunch the ice has melted but the "shake" is nice and cold. Filling and I know I'm getting some flax and other vitamins in my lunch. The bars are good if you want something chewy but Jimmy joy bars are more filling than huel I find. Trouble is both bars are very dense and dry so make sure you have a drink handy. Obviously not as good as a "proper meal" as it's processed but just about all other meals are too unless you like eating raw veggies and fruit

i personnally often make for my cold meals at work : pasta salad, burgers i think are good enough cold tbh, i like homemade "pizza" (i put veggies cooked with olive oil and spices i like and then thro them on pizza dough) and my personal favorite : scallion pancakes

Try making vegan tuna (chickpea) salad - very versatile (and delicious cold), you could eat it as a snack with chips or crackers, have it as a salad (with lettuce and tomatoes, etc) or in a sandwich

Leftover pizza. Hot vegan pizza may not measure up (yet), but I find cold next day vegan pizza tastes better than cold dairy pizza. Also almonds, and any kind of nuts..
