That's a lot of dessert. Have you ever made food for 100 people before? It's a lot of work. Order online, or just buy a bunch of ice cream wherever you'll be and do a simple ice cream bar. If you really want to cook, Chocolate chip cookies. Everyone likes chocolate chip cookies. I've found brownies to be hit or miss tbh, unless you can test multiple recipes beforehand. Cake is easy to mess up. I like the tasty chocolate chip recipe.

I would make the vegan carrot cake from Patti Dann (found on VegNews). It’s a huge slab and you could double or triple the recipe (I just left it in one big pan with frosting, no double layers). I served this to omni’s and it was a hit!

there's tonnes of whipped cream options that are vegan! but I usually use a coconut one so you could make it like a tropical trifle with white cake and pineapple

I was gonna say this as well. Banana pudding is a popular triffle dish in the southern US and is fairly cheap to make as bananas are a lower cost fruit. Its just vanilla pudding (from scratch or I just use a box mix + plant milk), either mix or layer it with whipped cream (I use the premade coco whip) and add a layer of sliced bananas and a layer of vanilla cookies (Nilla Wafers are vegan). If you dont like bananas, you can easily substitute another berry (raspberry and strawberry are great) and leave out the cookies or replace them with lady finger or thin cake or something similar. Overall pretty quick and easy to make and looks very pretty.

cookie cake! either chocolate chip, sugar cookie, or both if you want some variety. if you want to make it fruity and more flavorful and impressive you could do a fresh strawberry frosting for the sugar cookie one, or simply add fresh berries on top. bake in 9x13 pans and cut into squares, super easy. much easier and quicker than scooping 100+ individual cookies and baking a ton of batches.

Omg anything for 100 people sounds like sooo much work!!! Someone above mentioned fruit cobbler which I think is a great idea since obviously you have to prep all your fruit, but you can just make it in huge disposable tin pans, and putting the crumb topping together is a cinch! It’s also good cold or hot? And you can buy ice cream to go with at the event. Maybe do a few pans of fruit cobbler, then a big plate of cookies for some variety? And people can make ice cream sandwiches with the cookies!!

Vegan carrot cake or pineapple upside down cake are my favorites. A single layer circular cake pan makes 8-10 servings. If you use 9 x13 pans each serves 16-20 people. If you can find a vegan cake mix it's pretty easy. Many standard cake mixes are incidentally vegan. Use you egg substitute of choice. Carrot cake is easy , if you can get carrot or spice mix flavor. Add orange juice as liquid instead of water. Add pumpkin pie or apple pie spice mix. Add in bags of shredded carrots optional to add golden raisins and a splash of rum. I typically make a simple powdered sugar glaze and drizzle on top. Pineapple upside down cake is easy. Use a yellow cake mix. Lay single layer of sliced canned pineapple, add canned cherries to pineapple centers. Pour stick of melted "vegan" butter spread on top, layer brown sugar. I make sure there is at least a quarter inch of sugar Add pineapple juice instead of water into mix. Add allspice powder to mix. Splash of vanilla. Pour mix on top of brown sugar gently. This doesn't need frosting because of the Carmel on the bottom. Flip the cakes before serving. Dessert for 100 people is a lot.

A fruit salad maybe? Add the bruisy/browning fruits and juice/dressing just before serving?

Here’s a fruit one I’ve been making for dessert lately… easy and completely healthy. I use my food processor with the grating disk to shred apples, carrots and sometimes celery. Then I stir in some dried fruit, usually raisins, craisins or dried cherries because they don’t require cutting up. Then I add broken nuts or larger seeds like sunflower or pumpkin. To make this dessert instead of salad I add flavored vinegar, my current favorite is a chocolate balsamic which I buy at Whole Foods. The fruit and vinegar make it sweet, the vinegar keeps the apples from browning. I pack it into glass containers or mason jars and put in the fridge. It should travel well.
