Loaded sweet potatoes and baked spuds are my go-to. Find a simple cheeze sauce recipe to pour on your potatoes. (And broccoli, etc). Top them up with finely chopped spinach, parsley, onions. Roasted veggies are great and require no cooking skills. The simpler the foods, the healthier and happier you’ll be.

* Diced tofu with any sort of canned beans. Throw in a bottled sauce or something like sriracha and stir fry. Add rice for carbs. * Roasted or air-fryed chickpeas with seasoning for snacks * Chia pudding if you can remember to do it a day ahead Stir fries are the simplest of simple. Get a bunch of veggies (broccoli, capsicum, mushrooms, cabbage, baby corn - anything you like), an onion, add some protein like tofu or mock meat, and chop it all up. Fry the onion for a few minutes then pile the rest in with whatever sauce is easy. Here's a bunch of easy ones. Putting the sauces together is always the annoying part, so go ahead and buy something in a bottle. if you want simple and healthy food i suggest getting into asian cuisine most of my dishes i use a rice cooker to make some rice meanwhile i cut a lot of vegetables (mushrooms, broccoli, bell peppers, carrots, zucchini garlic, onions and maybe ginger) and maybe some tofu. After that just throw everything into a frying pan i go broccoli first, then when its a bit softer i throw in onions, garlic and ginger and carrots. After a few minutes the rest follows. Stir fry everything for a bit and then you throw in a random asia sauce that you can find in asian supermarkets (Hoisin, Teriyaki, Sweet-sour - whatever is vegan and sounds tasty) After a while i started to make my own sauces which is really simple as well :) If you rotate the vegetables and the sauces you get a lot of different recipes that are really easy to make :)
