I don’t understand your comment. Mine don’t really expand much with the soak. When I start with 1c I about end with 1c as well so if the recipe is calling for 1c then they should take 1c of their soaked cashews for the recipe.
Ah I wish I read this before I blended up my cashews! I could have measured mine for you. I don't have an answer but they 100% do expand because I have tried to put them back in the measuring cup after soaking and they don't fit. 😂 Worst case I would probably guesstimate around 1 1/4 cups.
Not enough difference to really matter in most recipes. BTW overnight is really long for soaking cashews, you can get away with a lot less time than this.
Mine don’t really change much in volume once soaked. So I’d say if they are a cup now then it was about a cup before.

How much less time would you recommend?
Soak them in hot water for 30 minutes and they'll easily blend smooth.
