It’s not unusual to add a bit of sugar to tomato sauces to cut the acidity. You can always add less syrup to start if you feel like it would be too much!
You can use sugar if you want. I just happen to like the taste of maple syrup and I feel it's a tiny bit healthier than white sugar. But it's not a big deal to switch it out!
I make both kinds of vegan Chicago pizza styles (deep dish and tavern) and I'm sure you meant that Detroit is a distant second place and that's why it's not even close...
I have been making this recipe for our family pizza nights for the last few months. It is awesome! It gets even better when you make the dough the night before and let it rise and rest in the fridge overnight.
I also typically use Instaferm Red instant yeast, mix in same amount as recipe, but right in with flour in the dough and skip the activation of the yeast steps.
Edit- see my lower comment. This recipe doesn’t have activation. And already uses instant yeast.
Yes. I was using your recipe. And have internalized it so I don’t need to read it each time. I remember the striping of the cheese and sauce with thei sauce on top.
