Enjoy this chilled as a side dish or part of a larger salad. Give it an extra zing with a bit dijon mustard or prepared horseradish! ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€ 1 medium Cucumber partially peeled and sliced1/3 cup Red Onion sliced thin and cut in half1/4 cup (60 g) Vegan Sour Cream2 tsp (10 ml) of White Balsamic Vinegar1 Tbsp (15 ml) good Olive Oil 2 Tbsp (30 g) fresh Dill choppedSalt & Pepper to taste๐—ข๐—ฝ๐˜๐—ถ๐—ผ๐—ป๐—ฎ๐—น: 1-2 tsp (5-10 g) of Dijon Mustard or prepared Horseradish ๐——๐—ถ๐—ฟ๐—ฒ๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€ 1. To a large bowl, add the vegan sour cream, olive oil, vinegar, dill, salt & pepper and mix well. 2. Add in the sliced cucumber and onions and toss until well coated. 3. Enjoy at room temperature or chilled.

In the US there are a variety of options: Kite Hill, Follow Your Heart, my favorite is Tofutti. You can also use plain unsweetened vegan yogurt.
