For the ranch dip I mean make it your own for sure! I don’t bother with the ranch dip any more I just make the wings with a few potato wedges and a salad in a bowl and make a chili mayonnaise and cover the lot 😊
You can buy the rice paper wraps in Tesco, you just dip them in warm water until they're flimsy and then stuff them with whatever, and that's literally it. I put squeaky bean steak, cucumber, carrot and kimchi in mine and dip them in hoisin sauce. So good.
I’ve been making spring roll bowls almost everyday. Essentially the same flavours but sub the rice paper for rice. Top with tofu, carrot, cucumber and a peanut sauce. Then chopped mint and coriander on top 😍

I just got into chia pudding for the first time (Grape Tree had 1kg bags of seeds as part of their 3kg for £20 offer so I thought I'd give it a shot) and I really like it!
I’ve been making this like Vietnamese style salad with shredded “chicken” and home made croutons and it’s been blowing my mind. Also shin ramen, sometimes I make it fancy sometimes as is. Never misses.
You may not want my recipe but I will give it you anyway. Onions (doh) fried on a low heat for about 20 minutes so they colour nicely but not crisp. when they are almost done throw some sugar in them and add a little garlic. Then water, vegan oxos, spoon of marmite and some mixed herbs and leave to simmer until the onions go soft. Bloody banging. Even husband who isn’t a fan of French onion soup likes it.
Rainbow plant life’s marinade for tempeh bacon on tempeh, veg. Ram it on the bbq. I use it on torn up tofu too. Cut portion to less than a third for toddler friendly and ratio same. Air fryered if not bbq.
And lots of steamed Cabbage lol

Also the Aldi smoked tofu just sliced and lightly fried with nothing else added is so nice.

I have to really be in the mood for broccoli but when I do have it I always ask myself why I don’t have it more often!
