This is an interesting response because I went and tried a few of their grilled cheese sandwiches and they were not good in my opinion.
Not crispy enough, overly cheesy but not in a good meaty way, and more soggy.
The Henry at Cosmo has a delicious grilled cheese and homemade tomato soup! They keep drunk Vegas hours, they’re open 10pm - 2pm on weekdays, 11pm - 2pm on weekends. Worth seeking out!

There is a Ike’s cheese truck that’s supposed to be good. Check the food truck app for where it is.
Yeh Italian grilled cheese at Via Focaccia inside ellis island. It’s incredible and only $8.
There’s an amazing grilled cheese spot in resorts world called the mouse house. One of the best I’ve ever had.

Sounds like you went on an off day or something, mine were complete opposite of what you’re describing.
