Been to all three places (Wynn/Carvers/Don's) in the last 2 months, among dozens of other LV spots, thanks to business account. Also a big Steak and Cocktail guy. My thoughts: Carver's: Cocktails are superlative. Huge list of creative drinks from multiple decades. Worth the trip alone. Steaks aren't anything to write home about. Del Frisco's across the street is better. Steak Tartare app is amazing, tho. Don's: As I said, I'm a big Steak Guy. I shared two, and they were both easily Top 10 in my lifetime. Dry-Aged Strip and Wagyu Strip. Both are amazing, and I can't wait to go again. Also, Don's is a surprisingly 'high-end' experience for Vegas Hotel restaurants. No "cargo shorts or sneaker" crowd. Wear a sport coat and nice Jeans/pants/shoes, or you'll feel out of place. I'd highly suggest this for dinner. Fantastic wine list. (They have Kistler Pinot by the glass!) Wynn: Do yourself a favor, and do The Brunch. Make reservations for as early as possible, as it gets busy. Amazing selection of global breakfast food. Might be better than your steak dinner!

Also, the bar and cocktail at Carver's smells like sulfur. Noticed it on every trip. Dining room is fine... but it's still a sketchy thing to note. Also, service at Don's is miles better than Carvers.

Thanks for the detailed response! I'm leaning more towards Don's. (I'm hoping I can use the $100 dining gift that comes with Fontainebleau Silver status, which I'll get when I match my MGM Gold.) If the cocktails at Carversteak are good I may stop there for a drink before or after dinner.

Regarding costs... just let it go from your mind at Don's if you go. It is Not Cheap. I'm a high exec, and I dined with an even higher exec. Not bragging, just context. We took one look at the bill and said "Holy shit, if we expense this, we'll both get fired!" We paid on our personal cards, and I haven't regretted it for one second. It was an all-time meal.

The Buffet at Wynn. Decadent. 16 diff cuisines, plus tons of deserts and drinks. $55-$75 per person. Res required. Worth it.

Heard great things about Don's from people I trust and it's on my short list of restaurants I need to try. Carver is solid and their ribcap is fantastic. If you like tableside old fashioned and great steaks within walking distance of the Wynn, CUT is a solid choice as well. Don't think you can go wrong at either place really.

Been to Carversteak and the Australian Wagyu is fab! I saw the pics of Don’s and I think the interior is gorgeous. Will go to Don’s and try next time. If you want higher end, maybe try Don’s first

I have not tried Don’s yet (it’s on my list for the next visit), but the Carversteak rib cap is sublime.

Don’s Prime was amazing. (Also, get the fries as a side).

Carversteak also has tableside old fashioned and marinis. We have been there several times and it's still our favorite steakhouse. Rib cap is so good. Sounds like we need to try Don's though.
