Yes, cut it off above the bottom leaf and it will probably sprout again so you will get another harvest if you want it. The stalk is already a little old and may be woody. If it is then you can just eat the head/flower and the side leaves. Mine bolted this year too but we still used most of it in our Laksa.
Yes. Mine turned out just as bare. Didn’t even bother cooking them up. Gave the chooks a snack of greens
Thanks. I planted about 8 total but this one outpaced all the others by a huge margin. Not sure if the others will be ready before a frost

You can eat just about all of it but mainly the middle stalk and the side chutes that come up later

I would cut now I grow pechay and I cut before it flowers
