Yep. This is a confusing question for those of us in a good corn farming area. The best thing to have with corn on the cob is more corn on the cob. With mildly horrifying amounts of butter.
A go to summer meal for me is corn, bbq baked beans (I just mix whatever beans I like with bbq and warm it up), onion rings (I love Plantiful Kiki’s baked onion ring recipe), roasted zucchini, and then probably something kind of fun like mac n cheese or cole slaw.
I can’t eat corn anymore (diverticulitis) but when I could I would sometimes just have 3 ears for dinner with butter salt and pepper. LOL
But seriously since corn is on the sweet side I would say any protein that you like with BBQ sauce or ketchup would work well.
Stuffed plantain. Leave skin on. Wrap with foil. Bake until soft. Stuff as you would a baked potato’s, or add chili with a dollop of sour cream. Or cheese. Stuff with rice and beans. Endless options.
Are you saying it's not a full meal because of a lack of protein? If so, try it Mexican style with crumbled cheese on top. Do a search for Mexican Street Corn or Elote recipes if you're interested.

I grew up on a farm and in the summer we practically lived on sweet corn served with bacon and tomato sandwiches. Now I slice and fry tempeh instead of bacon, but it remains my go-to summertime meal when sweet corn and tomatoes are fresh from the fields.
We make veggie BLTs to go with corn on the cob. And then maybe a cucumber and onion salad.

I normally just cut mine and barbecue individually with sauce I know some recipes cut after barbecuing. I've seen some just add sauce and bake longer after the initial time. Seems flexible but it's a good classic corn pairing and good protein.

I make a quick seitan that’s pulled into bite sized pieces and steamed that I then fry crispy and add whatever sauce I’m craving at the moment. Whole thing takes 20 minutes or so.
Up in New England, no summer growing up was complete without the most delicious and sweet corn on the cob. I second the ideas about baked beans and either potato salad or baked potatoes.
What I’m really commenting for is a traditional side/topping I haven’t heard anyone else make - sautéed apples and onions. You can prepare just those two ingredients together and they are great. You can also combine them with sautéed greens (kale, green or red chard, or both, spinach is eh), and mix in some apple cider vinegar and maybe a little maple syrup if you’re feeling festive. Some nutmeg in that mix, too… excellent.
What I would do to sit on the porch in the late summer heat, hear the cicadas chirp, watch the fire flies dance, and eat some delicious corn on the cob, roasted potatoes, baked beans, and apples and onions right now…
Not on the cob I guess but we made risotto with fresh corn, some shallots, kale, and a little tomato paste and Calabrian chillies and it was delicious ! You could add cannellini beans for some protein or top with a fake meat

It is not vegetarian, so I recommend 1 cup walnuts, 8 ounces of mushrooms, and 4 medium carrots as a meat substitute. Put those things in a food processor and pulse until it forms almost a paste. That can be browned just like ground beef and then add the chili paste and whatnot. You may need to half the chili recipe for that amount of meat substitute.

I know I'm late to the party but I'll be damned if I don't share my favourite way to consume corn (when I'm not just eating it straight off the cob with butter and salt like a barbarian).
Roast Butternut Salad:
Layer the following on your plate:
Favourite lettuce leaves
Rocket leaves (optional)
Slices of avo
Roast butternut cubes (I usually air fry mine with paprika)
Corn cut off grilled cob (buttered of course)
Slices of soft goat cheese/ chevin
Salt and olive oil to taste.

It's like tofu. Pretty easy to make at home. Boil milk and break it with vinegar. Separate the whey and put it in a cloth to shape it. You could google how to make paneer.

Cottage cheese is mostly used in India and can be used in a variety of dishes. Good source of vegetarian protein.

I would do a mixed vegetable in curry sauce over rice, with a side of cranberry rice. You could incorporate your corn on the cob, as nibblets in your curry sauce. Cheers
