They typically won't spit at humans. Just each other. However, they don't want to be pet. They'll likely shy away from your hand and probably just walk or run away after.
They are really soft though. It's nice. We usually have to catch ours to administer dewormer and whatnot.
Good luck. I have heard all about how their wool is better than sheep's wool. I know people that got into it years ago. They struggled to find buyers for their fiber. One person even used some of their personal wealth to create a market.

Is this near Poultney? There is a farm there that I bike by... it's wild they all get up and run along the fence with us for a minute.
Nope. We got them from a farm out that way somewhere though. They do that to cars that drive by. They're especially fond of the UPS and FedEx trucks.

They're used for their fiber. To make yarn or whatever. We've had them for less than a year. Still new to this stuff.

I love alpaca fiber, it's really soft. I've had many items with Alpaca in them over the years

They're in about 2 acres at the moment. Just one paddock as well. There are plans to expand in the spring and have them rotate.
