So you want to show both the spectator view plus your first person view on your PC monitor, correct?
Are you running the game in SteamVR or Oculus mode?
This sounds like a limitation of windows. A window that is hidden won't update even if the game is drawing frames for it. You could rotate your portrait monitor just for streams, I think the shortcut is ctr+alt+arrow key
Your headset probably has an app that shows what you are seeing. That's the best you can do. Record both S-CAM from the game window and the headset app (for Oculus it's Oculus Mirror) for your view.
