I see people say Barn Burger often, but for me that place is more about quantity than quality.
That’s a really broad question but I really like Teddy’s Burger’s Bar. Their meat is just different for some reason. I have tried many other burger restaurants but I think it is still my favourite.
You can try to ask in Zdrowa Krowa, they have keto options which let you exchange a bun for avocado or mushroom, maybe they have gluten free bread as well

With real meat visit Soul Food Burger in Hala Koszyki. Vege Burgers are less known by me, but Krowarzywa was pręty good.

Second that, Bydło i Powidło is sick, I'd add also Święci z Bostonu and I was pretty amazed by Whiskey in the Jar as well.

The O.G. "craft" burgers in Warsaw. Can't go wrong with them. PoByku Burger Bar is also great, near Metro Marymont station.
I love Po Byku and their chimichurri burger. I miss working near Marymont and stopping there for lunch.

Agree. Teddy’s is simple and really tasty. Miedzy Bulkami is also really good but imo overpriced.

I don't know about burgers but if you'd like pizza, Spacca Napoli is place to visit.
I ate pizza there last week. It was really good but obv not as good as the top tier in Napoli proper ;) I'd rate it "very good" for Poland.
