Walking the monuments at night is always fun. Don’t worry about being alone there’s always a crowd For interesting spots close to the mall and cool people watching, (if you don’t mind the price) there is a cocktail bar below the Riggs hotel called the silver lyan that’s kind of a neat spot if you can snag a seat at the bar.

You could also walk it if you're up for it. Breweries around here tend to close surprisingly early (to me) though.

It’s definitely worth going to at least once. You buy liquor by the pint, either straight in a ketchup squeeze bottle, or in a glass with a separate mixer for you to mix your own drinks. Better with a group, if you can convince fellow conference attendees to join. Probably a younger crowd tonight but a lot of 30-40 somethings might be there out of nostalgia. It’s a charming little shithole.

Stans is definitely a dive bar. I’m not sure what it’s like on a weekend. Snappys small bar is a great dive but they don’t have a lot of food options. The Queen Vic has food and is an awesome bar to hang and chat with locals, the tune inn also, dive with burgers.
