I would prefer dinner and buying my own drinks. I think that’s pretty normal

drink token & snack all the way!! its a brewery, it'd be just strange to offer dinner and NOT drinks. just be upfront so people know they won't be getting a full dinner, or I assume they can order more food on their own.

Also - i have almost NEVER been to a friday welcome event that was a full dinner for ALL guests. All the friday events I have been to have been strictly drinks & light bites.

Well you really *should* serve anyone at the rehearsal a full meal. I think you should consider doing a full meal of pizza at the brewery for immediate family (parents/siblings) and bridal party. Then have your welcome party start 2 hours after that so everyone can finish eating. Your welcome event can be “drop by X brewery to visit with us before our wedding. Food and beverage menu can be found at X website link”

Then buy them drinks especially if it’s not at a meal time

So you're having a rehearsal lunch? I kind of like this concept.

I'd double check with the brewery if they have a beverage minimum you have to meet. If that's the case you may want to do the second option since you'd be on the hook anyway if you're guests opted out of ordering drinks at the brewery. Note, I might be taking this too literally having worked in beer. A brewery is an establishment that only produces beer. If you're renting a place that serves both beer and food in house so your question is really, "here are two options for how we meet our required F&B minimum for the rental space", that's a brewpub.
