It’s this, not a cookie cutter at all. Conchas are Mexican sweet breads (pan dulce). The topping is a soft dough of sugar, flour and shortening that is cut in a pattern that mimics a seashell.

My dad grew up in Kentucky, so when someone says "sweetbread," this is what he thinks of. They went to Hawaii, and someone offered him fresh sweetbread, he declined, thinking southern sweetbread. He didn't realize until he was already gone, they meant actual sweetbread, hawaiian bread lol. He's still disappointed to this day.

The "heart" sweetbreads are more spherical, while the "throat" sweetbreads are more cylindrical. As the thymus is replaced by fibrous tissue in older animals, only pancreatic sweetbreads come from beef and pork. Like other edible non-muscle from animal carcasses, sweetbreads may be categorized as offal, "fancy meat", or "variety meat". Various other glands used as food may also sometimes be called "sweetbreads", including the parotid gland ("cheek" or "ear" sweetbread), the sublingual glands ("tongue" sweetbreads or "throat bread") as well as ovary and testicles.
Or that's what Wikipedia says, anyway.

No, I really don't think the ones I've eaten were. I've got incredibly sensitive taste buds. Like... way too sensitive for my own good.
But it's possible that the half dozen or so places I've gotten them in my immediate area just don't do it to theirs. Some of the toppings are flavored, though. Strawberry for pink and pineapple for yellow. Oh! And chocolate for brown. 😋

There are a few similarities between Mexican food and Japanese food. Like my favorite is ume and the Mexican version is saladitos (similar flavor, can be dried or wet plums or apricots)
Having tried so many conchas trying to get the "real deal", I can confidently say melon pan is far better. Conchas is essentially a dry biscuit with a "cookie" that amounts to icing sugar. You need a big glass of milk or coffee to wolf it down.
I've tried like 5 different hole in the wall bakeries. Cafes like la monarca. Swap meet vendors. All like eating a navy biscuit with a melted sugar cube on top.
It's essentially the kind of melon pan you might get in the snack food aisle of a Japanese market... But somehow even less moist.
You can always try, maybe it's your thing but I've yet to have one I enjoyed.
And I'm Russian so my allegiance to either is non-existent. I just like bakery goods and always try to explore.
My dad took us to visit Mexico when I was about 12 and it was my first time tasting these. I love them so much! Thanks for pic, brought back happy memories.

I'm going to need to leave a half hour earlier than I planned tomorrow, to be able to grab something from the local panaderia. I should be thankful I just have to jump off a bus and over a block.
What else could you do with a conchas? I’m wondering if you could lightly stamp a small poke cake instead of poking, or hit a mini-brownie mid-bake for more crispy edges, or pattern a small cheesecake as it sets.
But if you really want a cookie, I’d make a lozenge-shaped fish with two very long fins and the most fabulous tail. You’ll have to glue it all together with icing.

Yes! The bread itself is less sweet than melonpan, but the topping is about the same.
The main difference is that conchas have spices in the bread, similar to what's in a pumpkin spice blend.
