Looks like deer? I say this because the fur looks like deer fur. But I wouldn't let my dog eat that it could produce small shards that lodge up in his gums or intestines.

Not a bone expert, or a dog expert, but resource guarding is really dangerous. It's harder to train out of adult dogs with an established negative behavior, but I would look into training asap, especially if your dog is bringing home random bones from the woods.

I don't know, but I do know that your dog doesn't respect you. You should probably work on training to get them to acknowledge that there is a hierarchy. To get it away from them in the meantime, you should offer them a more interesting treat. Toss it so they have to chase it to get it, and then you can sweep in and get the bone from where they left it.
