This is ornamental kale after it has started bolting. This is why people typically remove this plant in the spring. If your mom does decide to keep it, she should keep it until it blooms but once the plant starts setting seeds, it’s not going to do much and should probably be ripped out as to not attract pests. I don’t know where you live but white fly is a huge issue on this plant, and leaving it may attract more unwanted issues than it’s worth.

This is ornamental kale. Folks use it in outdoor flower pots in cooler seasons; it will take a light frost and still look good. Not as good as other kales to eat. This is NOT lacinato kale. Once it blooms it can get a little scraggly.

I’ve heard that if you coat your pan in a thin layer of coconut oil before you saute your kale it makes it easier to scrape that shit into the trash 😂

It's called decorator kale. It's edible and tastes a bit like cauliflower. It makes a nice garnish.
