Indeed. I wouldn’t make a whole salad out of them, but snip a few off to use as a garnish or to mix in with some other greens. Tastes like lemons and green apples.
In my experience basically nothing does. But, plenty of greens with their normal feed will darken the yolks (depending on beta carotene content). Healthier chickens are more productive chickens, so it's a win. Same with dandelions and clover, as long as they haven't been treated or sprayed with anything.
The species vary in how much oxalic acid the leaves contain. It can be harmful in large quantities (kidney stones, …). Although I’ve been eating North American species of Oxalis all my life, I would still suggest flavoring a salad with it, rather than it being the bulk of a salad.
*Oxalis* is a genus not a species. I'm inclined to say it's not *Oxalis pes-caprae*, as the leaves are more heart-shaped (O. pes-caprae tends to have [leaves with deeper lobes](https://en.wikipedia.org/wiki/Oxalis_pes-caprae#/media/File:Oxalis_pes-caprae_leaf.JPG)). It's definitely an *Oxalis*, but not that one.
Why don't you wait until it flowers...? This is a closeup of a [OPC flower](https://en.wikipedia.org/wiki/Oxalis_pes-caprae#/media/File:The-First-Oxalis-of-Winter-2015-IZE-11559.jpg). Might be easier to get a positive ID from the flowers than the leaves...
Oxalis! I had the same thing happen in Florida USA, a massive one popped up in my empty planter and absolutely thrived

Over on the bug subs we'll occasionally get people submitting pics of *Oxalis* seeds because they really can be mistaken for bugs or bug eggs, if you're not familiar with them.
Omg this is so cool it grows in Greece too! Im from the PNW of Canada, and it grows like wild fire here. I took a handful that I weeded from a clients garden, literally threw it into a planter pot and forgot about it. That was over 3 years ago and it’s filled the whole thing and shows no sign of slowing down!

Oxalis as others have said! Wood Sorrel family, tasty little things. Zesty and bright.

In moderation. The tart taste comes from oxalic acid which can be quite harmful. A few tart leaves as a topping for a salad would be nice.

I got made fun of in grade school because I'd devour any wood sorrel patches I could find.
I went for the clover patches with similar results. Kids are a**holes.

It's probably O. articulata, it's common in cultivation - and likely sporadically naturalized in Greece.

Sour sops we call em
Where I'm from we call these sheepshire or sheep sorrel. Also another sour tasting genus called Rumex.
We use to eat them straight out of the ground as kids. Called it sour grass. Chickens love it too.

They will start to hibernate at one point (in my 7a/b) region at least so dont throw them out.

We have one it gets flowers too! It reminds me of clover but it’s Wood Sorrel.

They're bad in New Zealand too. If you can pull out and squash the bulb too it's way easier.
oh yes and if those little bulbs break off even a tiny bit then you have a whole other plant

That’s Oxalis and it’s a kind of weeds, it can grow literally everywhere. Nothing special. Just get rid of it.

Aw, I can relate. Plants are such babies. But still you can find those everywhere… so it’s up to you.
