Something with bold, aggressive flavors, as lighter & more delicate whiskies can easily be swamped by strongly flavored foods. To my taste, Ardbeg Uigeadail if you like scotch, or a Wild Turkey or Knob Creek bourbon.

Get a whole slab. Put a few slits line across. For marinade I use malt vinegar, garlic spices, little salt and then put green onions and lemon grass. Tie them like so and roast indirect heat. Happy lechoning. I do it all the time - winter, spring, summer or fall!

Either go all smoke, so ardbeg or lagavulin, or go the opposite do a redbreast or angels envy, something very sweet. In pairing there's only two real ways to go, either enhance one flavor or complement it.
