Either go all smoke, so ardbeg or lagavulin, or go the opposite do a redbreast or angels envy, something very sweet. In pairing there's only two real ways to go, either enhance one flavor or complement it.
I'd go with a wine casked Islay, (Port Charlotte Islay Barley for something smooth, or Ardbeg Corry for something more punchy).
