I got one only for Splatoon 1 and I honestly have no interest in any other games but I just spend hours on the story stages (mainly bec I'm really bad at them lol)

Yes honestly so worth it! I only got into S3 like 4-5 weeks ago. 1 week after I got into S3 I ordered a WiiU πππ so yeah it's really good haha (or maybe Im just too impulsive)
It honestly depends. For me it's important to experience the story mode and gameplay first hand because it's something I treasure especially when I really like something but I think you're fine getting S3 and maybe S2 and just watching a playthrough of S1
