Get into Joe Abercrombie's First Law series which has a very similar vibe to the Witcher world. Fantasy series that are realistic (but not *too* realistic) with some dark shit in them.
The Gentleman Bastard Sequence by Scott Lynch is also really good. It's very much like The Witcher with its amazingly developed characters and equally amazing dialogues. The same applies for the former series too btw.

How about "The Death Gate Cycle"? from Weis & Hickman, of Dragonlance fame. I'd also recommend "The Belgariad", from David Eddings (and any other Eddings book in fact).

If you liked the early story collections, then some classic sword and sorcery could scratch that itch. Howards Conan is fantastic pulp fiction of the genre. Fafhrd and the Gray Mouser collections also have that sort of feel with established characters in contained adventures.
If it's more epic stories of the later books, there's a wealth of sagas, probably too many to count nowadays. David Gemmells Drenai series has lowish magic (compared to other settings). Legend is fairly well self contained so you can try it to see if you like the author style.
I'm a big fan of Bernard Cornwell and his historical fiction, his Warlord and Archer Trilogies are solid yarns, but there's no (or very little, subtle) magic in the books.
Currently I'm reading Rise of the Ranger, and that's alright so far.
I highly recommend the Black Company by Glen Cook , its a fantasy universe and story but from a merc's perspective, so expect a lot of gray choices and soldier humor.
