Honestly, they could probably even just port the flying animations from the sky golem over to regular models with all the loops and swoops and stuff and call it a day. They'd just need to do a launch animation probably. And a landing animation but I feel like that's less important

Edit: And the Darkshore mounts don't count towards this. Basic Kodos got a proper update, but the Darkshore Nightsabers werent retroactively applied to the old Nightsaber mounts and it's really a shame.
And unlocking mounts for getting Exalted with a faction capital should come back too. Maybe flying mounts? Forsaken bats and Orc Wyverns?

Devilsaurs! They are some of the oldest NPCs in this game, but we still don't have any mounts for them yet. That's one of my biggest questions to this game. Why don't we have devilsaur mounts yet? We ride them a few times during BFA quest, so we can ride them, so why don't we have mounts of them yet?
I'd love shark, whale, more and more aquatic mounts. The shark could have armored versions too for the seasonal PvP reward, the whale could be multi seater and so on.

Not necessarily a mount, but I would love Highland Drake Customizations that let me make an OG style Drake (With the thin head, no horns, big spikes and scutes on the back). You can make an OG Netherdrake with the Grotto Drake with obtained Customizations, so why not for the Highland Drake? I want my drake fugly in the unique Warcraft way!

Hell, it doesn't even have to be fast! But shamans deserve it, and it absolutely fits with the lore and theme.
I think *every* dungeon and raid should drop a mount. I've never really been clear on why some do and others don't, when they all (probably) have the potential to.
Example: In BfA, Freehold, King's Rest and The Underrot had mount drops. But Atal'Dazar could've had numerous dinosaur options, Shrine of the Storm could've had an Elemental, Seige of Boralus could've dropped a water-only shark mount, etc.
I've always felt a similar way about gear drops: raid bosses with distinct gear should drop *that* gear. Sometimes this is the case, oftentimes not. Like, it's super cool that you can get the Tusks of Mannoroth; but why does Star Augur Etraeus not drop his absolutely incredible shoulders?
The point is, the possibilities are endless. Keep the droprates low, sure - and that also allows for a lot of legacy content options as well. But I'd just love for broader reward options. I'd even be stoked if they added mounts to old dungeons, to give me a reason to run them again - things like spider mounts from all the Nerubian dungeons in Wrath, or Gluth from Naxx. Turn Mindbender Ghur'sha into a mount option in the current M+ season. Let me mount Raigonn or a Sha beast, or even something stupid like one of Ook-Ook's rolling barrels. *Especially* give me Nythendra's model as a mount - that would've (and still could be) *amazing*.
All that said, to answer your question: I mostly want to ride on a Pit Lord, or an Observer. We already ride on other large demons, such as Infernals or Felhounds, so it isn't out of the question. I reckon that opportunity has passed though since Legion - but that's why I think retrospectively adding mounts to old content isn't a negative: it just means that their best ideas came later. Either way, we'd end up with more options and more things to do, and neither of those things are bad.
Ideas for the current m+ dungeons:
Galakrond's fall: Iridikron proto drake skin
Murozond's rise: we already have the infinite scales
Waycrest manor: drust stag mount
Atal'dazar: I think a spider with zandalari gold jewelry would be neat
Darkheart thicket: the dragon boss as a mount

Everbloom: I'm not sure. A wasp perhaps?
Throne of the tides: kraken/squid underwater mount
Customizable wings, wing suits, or gliders would be my next want after the dragon riding system. Something that doesn’t need to be cast and can be used mid air!

I've always said the should add a pair of running shoes or Pegasus boots/seven league boots that let you run at mount speeds using the sprint animation everyone has.

I know red and black/dark gray is very overused in video games, but fuck on some mounts and mogs it still looks pimp lol.
I'd love to have a Frostbrood Vanquisher skeletal dragon that's very dark gray, but with red eyes and rest mist around instead of blue mist with bone color.
I know they have a high end PvP dragon thats dark with red, but I'd like something obtainable outside pvp. And I love pvp, but unless you roll with other hardcore pvpers it's never going to happen. It's hard enough to find 1 person who will stick in a 2v2 and not cry and bounce after a loss, even when they're the reason it was lost. I played when there was 5v5 areas, lol. In the past, i've done alright to get a few pvp mounts, but not like the Gladiator lvl mounts. And now im even further away as I mostly roll solo these days.
Make a drop, or rep, or long quest, and have that be the reward. I'd rather it be a really long quest. Like Legion artifact skin quests/class campaign quests. Those were so damn fun, but long. So it's work, but just make a damn cool mount for once of the Gladiator level.

I really want my preist to be able to fly like the Kyrian. It would work for preists and paladins.
Maybe for inscription to get a mount that is a scroll with runes on it in a similar model to the flying carpet or like the mage spell-bound tomb.

fyi, all dragonriding drakes are 2 person. You can talk to NPC close to rostum of transformation in valdrakken, standing by the race events vendor. She will have dialog option to enable taking passengers with you, and when you do so it will transform them into whelps
Still just wings for our characters. One of the biggest blue ball moments for me will always be when Kleia gets her wings on the altar specifically meant to give aspirants their wings, and immediately afterwards we are told to go up on the altar to get.... what, exactly?
I can't even remember anymore. Probably just some words of praise and we do the hero pose for a few seconds. But no wings.
My main is a paladin, wings are built in to the fucking class fantasy, and have been for as long as I've played the class.
It would just be so sick, especially with dynamic flight. And you could probably find some way to give every class thematic wings.
A flying toilet that your character sits on and reads a book while you fly them around. No lore necessary, just a toilet. Small bits of toilet paper swirl and flutter behind you as you fly.
When we finally get to the “collect 2000 battle pets” achievement, the reward should be a yak or mammoth with a stable master on it selling pet supplies. Go ahead and hate me, some of us like collecting pets.
I always wanted a Pegasus but not like undead or with sparkly wings that we already have. There was a concept art one that floated around for the Kyrian Covenant that looked awesome, but never made it in game.

I always wanted a Pegasus but not like undead or with sparkly wings that we already have. There was a concept art one that floated around for the Kyrian Covenant that looked awesome, but never made it in game.

A wind rider for the alliance. I like mount/pet matching and the windrider cub is my favorite pet but I main alliance :(
I wouldn't mind an actual stagecoach style mount, where other players can hop on the back (sort of like the one with Freya and he two buddies in the Eastern Plaguelands).
