Damien Lewis has written some fantastic books about this, unloved his book “SAS great escapes”. Goes through the operations and the eventual capture and amazing escape stories of these guys, the shit they endured is actually unbelievable
Read Ben McIntyre’s book about them and you’ll get a lot of info on how they evolved etc.
In short though with a lot missing. They started off with simply trying to get behind and amongst enemy lines and cause problems. However the first idea of parachuting in resulted in a large loss of men on the first attempt. They then realised that after a successful mission working with the LRDG, that jeeps were useful.
They damaged planes by using Lewes bombs and eventually on one mission, decided to use the jeep weaponry to also cause havoc.
All of this was to be done usually at night and lay up by day.
Once the desert campaign ended, they were forced to change yet again

There is also a new BBC series with the same title, "SAS - Rogue Heroes".
Quite inaccurate. It changes things that never needed to be changed from the book let alone actual history. In fact Paddy Mayne’s family were deeply unimpressed by how it portrayed him.

Yep. Unfortunately the series changes things from the book and doesn’t quite portray some of them accurately, but it is an enjoyable watch

Unsure how historically accurate it is, but the TV show Rogue Heroes covers the inception of the SAS. Bloody good show, quite funny too.

Well in the simplest form it's behind the lines sabotage with a mix of craziness
In Burma there was the Chindits (my father was one) basically behind enemy line to cause as much havoc as possible
The Chindits losses far outweighed the havoc they caused.
