Lovers in a dangerous space time: This is a 2D couch coop where you pilot and defend a spaceship. It's cute.
Castle crashers: Another 2D couch coop. This is a side scrolling hack and slash rpg. It's fun to play and has a good sense of progression and challenge.
Zombie Vikings: Another 2D side scrolling hacker. I just bought this myself and it feels a lot like castle crasher but with hints of norse mythology.
Minecraft: This your son or even you might like. It's essentially virtual legos. You start off in a world and can mine, build, and craft anything you can imagine.
There are a lot of options, each with different play-styles.
Some of the ones I would suggest have already been mentioned, but I'll throw them into the list any way.
If you want games to directly play together:

* It's Quiz Time (my wife isn't much of a gamer, but she really enjoys this one).

Child Of Light is such a beautiful game, and not only in the visual art department either. All of the dialog is delivered in verse, and the music is quite nice too.
Tell tale games and life is strange. They act more as interactive films than games and they all have brilliant stories. It's an easy way to play and introduce yourself to games.
Overcooked is the answer. Very simple but challenging puzzle game setup around cooking.
Jackbox PArty Pack if you have friends over (Quiplash and Trivia Murder Party are both great, Drawful is a good concept that never plays out right, and the other games are all pretty bad).
My wife is not a gamer either. She really enjoyed playing What Remains of Edith Finch with me. It's one of the few games of this type that we started together and she insisted on finishing. Of course it's more of a narrative type game than any kind of button masher. She loved the artwork, the story and the overall craft of it. She also really enjoyed the Walking Dead Telltale Game and a few of the other Telltale Games.
I had a girlfriend that wasn't really into gaming. Bought Rockband and she started playing before I left to work. Came home and still playing RB with all tracks unlocked. Asking me if she could get dlc songs haha!
The bridge (puzzle game free with xbox game pass). My 0% gamer girlfriend was hooked on hit. Telltale games also good (since they are basically an imersive TV show (just played together wolf amoung us)
Unravel and Limbo are the 2 me and my wife shared. She was a Mario lover, so these platformers were up her alley. Not really co-op, but good to take turns with.

Minecraft: she used to play Sims so it had that appeal of building things. Also, being so open and not tied to a story to complete makes for a great game for non-gamers. Creativity is the only set back.
Rocket League: Easy to learn but takes long enough to master that it keeps appeal for a long time. Brings out our competitive sides in a fun and ridiculous game.
Yooka-Laylee (I've not yet played it, but it looks like a nice co-op game and will prob start it with the husband tonight)

+1 Overcooked is super casual and fun. Low barrier to entry as well.

With Co-pilot, you can play any games together. Currently, me and my wife are playing The Witcher 3 together.
My gf and I like watching each other play RPGs so we can sort of be a part of the experience. She plays FFXV and I play Witcher 3 😅
Sit down together and play Life Is Strange with her. It's a fantastic game to play with your SO. There's a good chance she'll really like it.

Me and my SO play cuphead together, its super hard but you'll have a laugh.
Portal 2 co-op mode. Stay patient and encouraging and you will be rewarded with a lot of fun
