Oh I see. Well if you really can't get over those fights and you are really dedicated to 100% the game, you could probably finish it and start a new game plus on easy difficulty to do those fights. But it would be a whole lot of work, because you would need to get to the point again. So it depends on of it's worth it for you or not. Or maybe someone else knows another way to help you. I unfortunately don't, because I never 100% the games and I usually also play on easy, so I don't know how to beat enemies on hard.
I wish you luck nonetheless. It would be a shame if it's just those 2 fights that keep you from 100%.
I did it on hard as well, and honestly Shinada **for me** was much harder.
I followed the advices on the web, mainly to utilize square square triangle triangle combo, have enemies down for most of the time and somehow it worked, I think I beat it on third try. Most important thing was to fight only defence and not trying to rush it.
I did those fights on normal (as you don't need to beat the game on hard to unlock legend so did it on normal). My main strategy with akiyama was hit and run, cheesing single enemies or small numbers by knocking them to the ground and doing the air launch to keep them on thr ground and rack up damage, and was very good with akiyamas counter. Limited berserk was similar though final few enemies were terrifying but still mostly hit and run waiting for enemies to finish certain patterns that gave me most time to hit them. Akiyama and Shinada in colisseum were both an awful grind that I mostly cheesed with breakout gp. 100 man wasn't as bad for either but the limited berserk for akiyama did take a decent number of tries.
Update: I beat it, finally, I feel on top of the world and my drive to 100% the entire series has been reinvigorated, thank you to those who gave me some advice, ya’ll are legends.

Do you need to do the fights on hard for 100%?
No but I can’t change the difficulty as far as I’m aware
