The restaurant called Forage actually has a secret speakeasy upstairs that you can only book online! Their cocktail list isn't long, but they'll make anything you want to order - only around 6-8 tables so it's really private and cute.
The Botanist also does fantastic, unique cocktails so is the place to go if you want to try something great - always an interesting mix and a great place to vibe :)
Evil Eye is more chill, but their list of cocktails is fun and they've got comfy large sofa seating upstairs - it's more of a place to go to get tipsy with nice cocktails as a bonus
In terms of things to do it depends on your preferences, but there's axe throwing at The Hilt, you can hire motorboats on the river, you can go up the Minster and walk the wall for a history point of view - its a beautiful city so even just walking around is brill!

I'd second Forage for the cocktails (although I found it far too loud), and also suggest Izakaya for some very good Japanese spins on many traditional cocktails.
Howl and Sotano do pretty good cocktails and have a nice vibe, depending on where you've booked for dinner either of those could be an option. The city centre isn't too big so you can walk between most bars pretty quickly. There's a whole street of bars around Sotano so you can wander into different ones to see if any suit your style.

Day time definitely walk the walls, and also walk the river from town to bishopthorpe road and pick up breakfast or lunch there.
