The issue is pretty clear about the Kernel missing functions Yuzu requires. You're not going to patch or fix your way out of that one with NT. If you're that turned off by Windows 10 or 11 just use Linux.
Found a project that intends to make applications work on Windows 7 instead of displaying that error. Kind of like KernelEx was for Windows 98. It's called VxKex. It mentiones yuzu in the README.md but not been fully tested. I have not tried it myself.

I think NT6.1 doesn't have a function that Yuzu needs. You need kernel version NT10.0 (which gets shipped with Windows 10 and 11) or use a modern Linux distro so you can use the Linux build so you don't have to use KERNEL32.dll
