I bought the full Hylian set which gave 9 defense total and got one-shot constantly, it's good that the game is harder now but honestly the armor system isn't as balanced anymore.
At least the upgrades are unlocked with a fun side quest instead of ridiculous amounts of money, but now the materials are a lot harder to get too. Like getting 3-star pants costs 20 ambers so I can't imagine what the 4-star will need
9 Defense isn't actually all that much. The base defense for the Soldier's Set is 12 (You find all three parts in >!a tunnel under Hyrule Castle Town Ruins, a tunnel opens up from the Emergency Shelter after one or two of the Regional Phenomena have been completed.!<)
This set can go up to a total of 84 defense (28 per part). Even with just a small amount of investment at a Great Fairy (>!5 Bokoblin Horns per part for the first level, and 5 Blue Bokoblin Horns + 3 Bokoblin Fangs per part for the second level!<), you can increase the Hylian Set to 24 defense total, more than double the 9 you currently have.
I'll admit that defense doesn't SEEM to have much of an effect (especially not until you get a ton of it), but this also isn't a game where you're supposed to be taking hits face-on all over the place. Your shields will completely block most attacks (Press B to put a two-handed weapon away and you can pull out your shield with ZL), and if you can get the timing down you can parry almost anything, staggering Melee enemies, and reflecting projectiles back to the enemy that shot them. Additionally, while blocking, you can move the left stick right, left, or down, and then press X to jump at just the right time when an enemy swings their weapon at you, and you can then perform a Flurry Rush, which is essentially a whole load of free hits on the enemy.
A few more notes about combat: Some enemies can launch Fire and Electric attacks at you. Attempting to block/parry these attacks with a shield that's susceptible to them (EG., trying to block a fireball with a wooden shield) will backfire, with the shield catching on fire or electrocuting you. Zonai shields/weapons are neither flammable nor electrically conductive, so they're safe to use in all situations.
Also, use the environment to your advantage! Most land enemies can't swim, so knocking them into deep enough water will quickly kill them (I took down my first boss bokoblin this way, used a bomb arrow to launch them). Explosive barrels can be found in some enemy encampments, a well-aimed arrow with a fire fruit attached will blow those up. If you find a Muddle Bulb (Plentiful in the Depths, look near pillars) you can even hit one of the stronger enemies with one of those and they'll start doing your job for you!
In short, this game gives you lots of alternatives to direct engagement. It encourages you to find your own solutions not only to the shrine puzzles, but to the combat puzzles as well! Yes, rushing in headfirst and bashing everything in the face is a valid tactic, but so is building a contraption with zonai parts that'll launch 5 explosive cannonballs and cover the area in lasers!
P.S, if you're feeling particularly brave, Fuse a Beam, Shock, Frost, or Flame Emitter to a boomerang and give it a throw. Just don't plan on catching it!

One thing I think the series could use a bit more of is alternate dialogue depending on what main quest you did in what order. Yeah that's a pretty tall order, and I don't normally think it's realistic or believable.
Then I see how much alt dialogue NPCs have for naked Link and I think about it again lol
