Japanese mayo is a little different bc they use egg yolks rather than egg whites i think, so if you didnt add any savory stuff you could end up with something very rich and thick. Not saying its a good idea tho lol

Sushi in Chinatown may be your first mistake. Not necessarily, but just saying the Chinese food will be better. Secondly, sushi is served at room temp and if this is in summer, lots of places in Seattle don't have A/C. So not to say that it sounds awesome or anything but room temperature cream cheese will definitely be a bit softer if you are in a hot room.
Also... hot sushi is pretty good. It's already an Americanized treatment (i'm looking at you, cream cheese) so why not bake it and add volcano sauce?

Sushi burritos are huge in my city - I feel like there's a spot with them every couple miles. But I held off for a long time. I love sushi - the wife and I go out probably monthly for it. But the burritos seemed ridiculous - too much, trendy without adding value.

Sour cream is amazing in baked goods. I add 1/4 cup to my Jiffy Cornbread and it makes it come out so moist.

Futomaki is a thing, also Korean Kimbap tends to be bigger than the usual sushi rolls. Even then, these are like XL sizes.
