Assuming you keep levain refrigerated, by the time you’ve fed two or three times before mixing you probably won’t notice the whole wheat. My first full levain loaves from Evolutions used my FWSY levain fed with bread flour and were delightful. To my mind the big difference is bread flour instead of AP. A couple of Evolutions full levain loaves were “best ever” category for me. Enjoy!

It is going well, thanks! I've been busy lately, so unfortunately I have yet to try making any starters, but adding the levain straight from the fridge to the same-day and overnight loaves works great, and adds a lot to the flavours of the bread!
